＊今日のぬか漬け＊
今日は久々のカブ！夏場のカブは、長野の柴本さんが出荷してくださっています。冬場とは違った顔つきのカブ、どんなお味なのでしょう。皮を剥いてみると、なんとキメの細かいこと！包丁がスッ、スッと入っていきます。スジっぽかったり、堅かったりするカブは、皮を剥くときにもガリガリした感じがするもの。柴本さん、これ良いカブですね～。
＊今日のぬか漬けの出来具合＊
ボーノ！これはおいしいです。しっとりした歯ざわり、絶妙な塩加減。しっかり使っていてカブのおいしさも活きています。
最近、手を抜いていた反省もあって、先週末からぬか床改善すべく動いています。まず、ぬか床がベチョベチョ気味だったので、しっかり足しぬかして、塩もたっぷり入れました。そして赤唐辛子も2本ほど入れてあります。1週間もすると、変な匂いもなくなり、程よい堅さになり、良い感じです。
そういえば、先日梅干を作りました。お待たせしていますが、次回いよいよその様子を紹介いたします！
