【番外編②】今年の梅干し

今週末はお客様と一緒に産地訪問バスツアーを楽しんできます。タニザワの産地のことをよりご理解いただければなぁと思っています。

さて今回は、度々お知らせしていた、先日の梅干しの作業の様子を紹介します。またまたスーツ姿の漬物チームが食堂にぞろぞろと集合して、「さて、やるか～！」何だか息が合ってきた様子。さっそく黄色く良い香り漂う梅を水で洗い、丁寧に拭いていきます。その量といったら、大変。商品にならなかった傷物の梅も含めたら、5kgぐらいありました。そんな梅も、「もったいない」精神にのっとり、社内の昼食用に梅干しを作るのです。
そして、竹串を使って一個一個ヘタを取る。らっきょうに続き、何と地味な作業...。藤川監督の指揮のもと、新入社員の綾具君、野藤さんも慣れない手つきで黙々とヘタを取るのでした。5人もいれば何のその！30分ぐらいで終わりました。
焼酎でホウロウの内側を拭いて殺菌し、ヘタを取った梅を入れ、塩を入れます。重石をして、カビが生えないようラップをかけ、1週間ほど置きます。梅の汁が上がってきたら、重しを軽くして、さらに置いておきます。あとは土用干しを待つのみ☆さて、今年の梅雨明けはきちんとやってくるのでしょうか？
