　こんにちは！ランチブログを担当しております、入社１年目の野藤恭子です。毎日が勉強の日々ですが、楽しみながらブログを書かせていただいております。皆さまお元気ですか？

　今日のランチは、変り種みそ汁でした。実として、じゃがいもを用いるところは普通。この緑の物体は！？モロヘイヤ。今日は、モロヘイヤの味噌汁です。
　3週間くらい前になるでしょうか、タニザワではずっとモロヘイヤを扱っていますが、ランチではあまり登場していません。モロヘイヤの味噌汁が出たことで、モロヘイヤのインパクトは大ですね。

　モロヘイヤは、エジプトを中心とする地中海が原産です。古代エジプトでは、既に若い葉や、茎を食用にしていたそうです。日本で栽培されるようになったのは、1980年代に入ってから。今から20数年前ということになるので、日本ではわりと最近になりますね。このモロヘイヤ、カルシウムがずば抜けて多い！他にもカロテン、カリウム、鉄、ビタミン類なども豊富です。きわめて栄養価が高いため、健康野菜として注目を浴びているのも納得。数年前に.モロヘイヤジュースなんていうのも登場しましたよね。

　茹でてから水にさらして、細かく刻んでスープにしたり、おひたしにしたり、天ぷらや炒め物にも使用されています。強い粘り気はあるけれど、いろいろな料理に使えるので、便利ですね。
