　こんにちは！ランチブログを担当しております、入社１年目の野藤恭子です。毎日が勉強の日々ですが、楽しみながらブログを書かせていただいております。皆さまお元気ですか？


　大豆の未熟豆が枝豆ということをご存知ですか？今日の【大豆たっぷりサラダ】を食べていて大豆と枝豆って似ているなぁと思っていました。膨らみ具合、形、芽の感じが似ていませんか？(写真下)

　大豆と枝豆の違いは何かということが気になったので、昼休みに本で調べてみたら、アーラびっくり！同じ豆なんですね。大豆と枝豆は調理方法が違うし、色も味も固さも違うので私にとっては衝撃的な事実でした(汗)

　今日の【大豆たっぷりサラダ】も2つの豆とも固さや味が違いました。大豆は柔らかくて枝豆は豆のカケラが残るという感じでした。上顎でつぶせるのが大豆、つぶせないのが枝豆といいましょうか。
　ドレッシングがかかっていたので、味の違いは少々ぼけてしまいますが、枝豆の方が甘い深みのある味(香り)がありました。枝豆は、わりと最近まで土の近くにいたわけで、大豆に比べると鮮度落ちが少ないから野菜の旨味を堪能できるということでしょうか。枝豆も生食ではなく、一回湯の中に入れますが、元の状態が生(枝豆)乾燥(大豆)なのでちょっと違います。保存性としては大豆の方がバッチリですね。ちなみに大豆を暗所で発芽させたものはもやしです。大豆すごーーーい！

　【大豆たっぷりサラダ】という料理名なのだから、メニューをみればわかりますよね・・・。ちなみにタニザワ食堂の入り口にはこのような(写真下)メニュー表が立掛けられています。
